Production of plant-based shrimps

Plant-based food products are becoming more and more popular among consumers. One recent idea is to produce vegan shrimps. The goal of this thesis is to develop a novel production chain to fabricate vegan shrimps on a small test scale.

  • The preliminary work packages include the following: - Get familiar with the project and requirements (product, material, extrusion process) - Define a first concept for the production chain of shrimps (e.g., extrusion and/or molding) - Create CAD models for extrusion nozzles and/or parts for molding - Fabricate nozzles and molds using additive manufacturing (e.g., SLA or SLS) - Testing of parts and production process and iterative improvement - Documentation of results (weekly meetings, midterm & final presentations, thesis)

    The preliminary work packages include the following:

  • - a high level of motivation, hands-on mentality, and passion for the topic
    - experience with CAD design, iterative prototyping, and testing
    - the desire to do your thesis together with a young startup from ETH Zurich
